Bread is one of those things you miss the most when you go Paleo. Once you realize that we don't eat for sustenance alone but to trigger emotions of happiness, contentment, and joy, you begin to realize our relationship with bread.
It's deep. Not as deep as evolution, but there's something glorious about warm bread fresh from the oven, slathered with butter and cinnamon and honey, that'll tempt even the hardest core Paleo lover.

We tasked our puppet baking crew to put together this short video for you showing the finer points of baking Paleo bread.
For our many European fans this bread will be remarkably like what their Nana or Omi or Granny made them. This is unleavened bread, which means it won't rise and make those huge doughy bubbles inside. Still, it's pretty darn good!
This bread has no gluten, no grain, and no dairy. It is based on nuts & seeds, is nutritionally dense, and has a wallop of protein from eggs in it.
Lee & I love having this around the house; we find that a slice just past noon is enough to keep us fired up well into dinner time.
